Easy to make Paneer Bhurji..
Here is the recipe :~ A popular and delicious North Indian dish, but liked everywhere because it is quick and easy to make and had an amazing taste.
Bhurji means scrambled, so this dish is scrambled paneer (cottage cheese). The use of veggies and spices makes it awesome. Another option for paneer is tofu (soybean cottage cheese).
So the veggies are,
1 capsicum,
2 onions,
1 tomato,
Half cup coriander,
3 green chillies
200-gram paneer.
Now if you are planning to make paneer from scratch it's quite easy. You get fresh paneer at home all you have to do is add some lemon juice or vinegar in the boiled milk. Once the milk looks curdled, the whey is strained and milk solids are gathered in a cloth. The cloth is tied or put under the heavyweight. 30 minutes later you have a block of paneer ready, viola!
Also, we need to spice up our dish. So in spices, we will have,
1 tsp turmeric,
1 tsp coriander-cumin seeds,
1 tsp salt, 1 tsp mustard seeds,
1 tsp cumin seeds
Last but not least 3 tsp oil.
Take a pan and put it on a medium flame. Then add 3 tsp of oil followed by mustard seeds and cumin seeds. Then add onions and sauté it for a minute. Then add tomato and continue to sauté for another minute.
Now add capsicum. Capsicum is optional here. We are using here because it will add a taste plus the texture of green capsicum and red tomato will make our dish look good. You can make bhurji without capsicum or can use any other veggie like green peas.
So after adding capsicum (or if you have skipped it) add 200gm paneer. Don’t forget to scramble it nicely before adding it.
Then add 1 tsp turmeric, 1 tsp coriander-cumin seeds and 1 tsp of salt and mix it well. Every spice we have used should get properly blended with paneer and veggies in our dish.
Now close the pan and let it settle there for 3 minutes. Then serve it and garnish with coriander or if you are too hungry and can’t wait just start with it.
