Bhurji means scrambled, so this dish is scrambled paneer (cottage cheese). The use of veggies and spices makes it awesome. Another option for paneer is tofu (soybean cottage cheese). So the veggies are, 1 capsicum, 2 onions, 1 tomato, Half cup coriander, 3 green chillies 200-gram paneer. Now if you are planning to make paneer from scratch it's quite easy. You get fresh paneer at home all you have to do is add some lemon juice or vinegar in the boiled milk. Once the milk looks curdled, the whey is strained and milk solids are gathered in a cloth. The cloth is tied or put under the heavyweight. 30 minutes later you have a block of paneer ready, viola! Also, we need to spice up our dish. So in spices, we will have, 1 tsp turmeric, 1 tsp coriander-cumin seeds, 1 tsp salt, 1 tsp mustard seeds, 1 tsp cu
